Game pie
Robert Carrier has some excellent recipes for game pie. I made one on New Year's Eve whose success depended on marinating the game for 12 hours in a mixture of half red wine and half brandy. I tried another yesterday which required no alcohol but was equally good. Mince some pork and veal. Mix them together with seasoning, parsley, marjoram and thyme. Line a pie die with half of the mince, put some chopped pheasant/partridge/whatever you like on top, then add a layer of cubed bacon. Repeat the three layers, moisten with beef stock, cover with some shortcrust pastry coated with beaten egg and leave in the oven at 190 degrees for an hour and a quarter. Yummy!

Excellent! We used to make something similar in a loaf of crusty bread that was excellent - the juices soaked in and it was easy to slice.
Making good pastry is my weakness, but it sure sounds very tasty and easy to make.

Yes, into pies myself at the moment. Variety of spinach and ricotta, spinach and mozzarella, sausage/apple and sage washed down with a glass or two of Mercurey.

Yummy indeed, but are you sure that it's just as good without the booze? Or did you drink a glass or three as an accompaniment?

The thought that some of these young men who have been living hugely beyond their means to lure a trophy wife / girlfriend will have to break the news to them that the Porsche is going back and that they won't be able to continue living in Hampstead / Notting Hill / K&C, and that their holiday to the Maldives / Barbados / Cayman Islands is postponed indefinitely...well it gladdens my heart immensely.
But it doesn't bring me as much joy as knowing that some of their WAGs will only have been with them for their dosh, and that in the current crisis they will be emigrating for warmer climes, leaving those boys to ponder what they really have to offer the fairer sex...Joy, Oh Joy!
