Mix small pieces of stem ginger and a few drops of ginger wine into your whipped double cream. Spread onto your meringue base and top with stewed rhubarb. That's the last of our garden rhubarb this year which, thanks to the cold wet weather, has lasted until June.

There was snow in the Pyrennes over night. They're re-opening the ski resorts for June 1st !
